      不同酶制剂对废弃烟末提取物香气成分的影响

      Effects of Different Enzyme Preparations on Aroma Components in Extracts from Waste Tobacco Dust

      • 摘要: 为探究不同酶制剂对废弃烟末提取物香气成分的影响,以废弃烟末为原料,采用蛋白酶、纤维素酶、果胶酶、木质素酶和淀粉酶进行酶解处理,并结合气相色谱-质谱联用技术(GC-MS)、香气活性值(OAV)、正交偏最小二乘判别分析(OPLS-DA)及感官评价进行系统分析。结果表明:不同酶制剂处理均可提高提取物中香气成分总量,较空白组提升25% ~73%;其中蛋白酶和纤维素酶处理效果较优,酮类化合物含量分别提高88.87%和85.38%。基于OAV和OPLS-DA分析,筛选得到巨豆三烯酮、大马士酮、茄酮、反式-β-紫罗兰酮和β-二氢大马酮等关键差异香气成分。感官评价结果表明酶处理提取物有助于增强卷烟的烟草香、花香、甜香和烘焙香特征,提升香气协调性,改善烟气柔和细腻度,其中蛋白酶处理组综合表现最佳。综上,酶辅助处理可改善废弃烟末提取物的香气构成和卷烟加香作用效果,蛋白酶处理样品具有作为烟草源香料进一步开发应用的潜力。

         

        Abstract: To investigate the effects of different enzyme preparations on the aroma components of extracts from waste tobacco dust, waste tobacco dust was used as the raw material and treated with protease, cellulase, pectinase, ligninase, and amylase. The resulting extracts were systematically analyzed by combining gas chromatography-mass spectrometry (GC-MS), odor activity value (OAV), orthogonal partial least squares-discriminant analysis (OPLS-DA), and sensory evaluation. The results indicated that all enzymatic treatments increased the total aroma component content in the extracts by 25% to 73% compared with the control. Among them, the protease and cellulase treatments exhibited better performance, with ketone content increasing by 88.87% and 85.38%, respectively. Based on OAV and OPLS-DA analyses, key differential aroma compounds, including megastigmatrienone, damascone, solanone, trans-β-ionone, and β-dihydrodamascone, were identified. The sensory evaluation indicated that enzyme-treated extracts contributed to enhancing tobacco, floral, sweet, and roasted notes, improving aroma harmony, and increasing the smoothness and delicacy of smoke, with the protease-treated group showing the best overall performance. Overall, enzyme-assisted treatment improved the aroma composition of extracts from waste tobacco dust and their sensory performance in cigarette flavoring, with the protease-treated sample showing potential for further development and application as a tobacco-derived flavoring.
