      云南产区不同烤烟品种挥发性香气成分特征分析

      Characterization of Volatile Aroma Components in Different Flue-Cured Tobacco Varieties from Yunnan

      • 摘要: 为探究不同烤烟品种的香气特征和差异,采用顶空固相微萃取-气相色谱-质谱联用技术(HS-SPME-GC/MS)结合多元统计及香气活性值(OAV)评价,分析云南同一产区9个烤烟品种的香气成分。结果表明:(1)9个品种共鉴定出74种香气成分,种类和总相对含量存在差异;香气物质种类在K326中最多,云烟301中最少;总相对含量在K326中最高,云烟116中最低。聚类分析结果将K326、YN223、云烟121、云烟301、云烟87划分为一类,将云烟97、云烟100、云烟105、云烟116划分为另一类。(2)通过PLS-DA筛选出18种关键香气物质(VIP>1,p<0.05),其中新植二烯、苯甲醛二甲缩醛、苯甲醇和茄尼酮是核心标志性成分(VIP>2)。(3)OAV分析共鉴定出19种OAV>1的香气活性物质,其中8种共有致香物质(大马士酮、大马酮、壬醛、β-环柠檬醛、巨豆三烯酮1/2/4及β-紫罗兰酮)构成各品种的果香、花香、烟草香香气基调。癸酸甲酯、壬醛、香叶基丙酮、巨豆三烯酮2(VIP>1且OAV>1)为驱动不同品种风格差异的潜在特征物质。本研究明确了云南同一产区不同烤烟品种的香气特征差异及关键致香物质,可为分子标记辅助育种提供候选靶点,并为工业模块化配方设计提供理论基础。

         

        Abstract: To investigate the aroma characteristics and differences among different flue-cured tobacco varieties, this study analyzed the aroma components of nine flue-cured tobacco varieties from the same production region in Yunnan using headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry (HS-SPME-GC/MS), combined with multivariate statistical and odor activity value (OAV) analysis. The results indicated that: (1) A total of 74 volatile aroma compounds were identified across 9 varieties, with variations in compound types and total relative content. The number of aroma compounds was highest in K326 and lowest in Yunyan 301, while the total relative content was highest in K326 and lowest in Yunyan 116. Cluster analysis classified K326, YN223, Yunyan 121, Yunyan 301, and Yunyan 87 into one group, and Yunyan 97, Yunyan 100, Yunyan 105, and Yunyan 116 into another group. (2) Eighteen key aroma compounds were screened by PLS-DA (VIP>1, p<0.05), among which neophytadiene, benzaldehyde dimethyl acetal, benzyl alcohol, and solanone were the core marker compounds (VIP>2). (3) OAV analysis identified 19 aroma-active compounds with OAV>1, including eight common aroma-active compounds (damascenone, damascone, nonanal, β-cyclocitral, megastigmatrienone 1/2/4, and β-ionone) that contributed to the basic fruity, floral, and tobacco-like aroma notes of all varieties. Methyl decanoate, nonanal, geranylacetone, and megastigmatrienone 2 (VIP>1 and OAV>1) were pinpointed as potential characteristic compounds driving the stylistic differences among varieties. This study clarified the differences in aroma characteristics and key aroma-contributing compounds among different flue-cured tobacco varieties grown in the same production area of Yunnan, providing candidate targets for molecular marker-assisted breeding and a theoretical basis for industrial modular formulation design.
