    雪茄烟叶晾制过程中颜色与水分含量和膜脂过氧化的关系

    The Relationship between Color, Moisture and Membrane Lipid Oxidation of Cigar Leaves during Air-curing

    • 摘要: 为明确雪茄在晾制过程中烟叶颜色变化机理,以德雪7号上部叶为试验材料,研究了雪茄烟叶晾制过程中变色期的颜色参数(L*a*b*CH)、水分指标(含水量、水活度)、膜脂过氧化(O2·-、H2O2、MDA)程度及抗氧化酶(SOD、POD、APX)活性的变化规律。结果表明,烟叶在变色过程中,叶片正面与背面的颜色参数变化趋势一致;随着晾制的进行,烟叶中的水分逐渐散失,且主脉中的水分散失速率低于叶片中的水分散失速率;烟叶中活性氧物质(O2·-、H2O2)和MDA含量逐渐增加;抗氧化酶活性均有较大的变化,但酶活性的变化规律略有不同:SOD和POD活性先增加后降低,APX的活性却一直降低。相关分析表明,水分指标、膜脂氧化程度、抗氧化酶活性与颜色参数之间相关性均较好。

       

      Abstract: In order to clarify the mechanism of tobacco color change during the air-curing process, the upper leaves of Dexue NO.7 were used as the experimental materials to study the changes of color parameters (L*, a*, b*, C, , H), moisture (moisture content, water activity), membrane lipid peroxidation degree (O2·-, H2O2, MDA) and antioxidant enzyme (SOD, POD, APX) activities. The results showed that the change trend of the color parameters of the front and back of the tobacco leaves was the same during the process. During the air-curing process, the moisture in the tobacco leaves gradually lost, and the moisture loss rate in the main vein was lower than that in the leaves. The contents of active oxygen (O2·-, H2O2) and MDA increased gradually. The activities of antioxidant enzymes changed a lot, but the change rules of enzyme activities were slightly different:the activities of SOD and POD increased first then decreased, but the activity of APX decreased all the time. Correlation analysis showed that the correlations between moisture index, membrane lipid oxidation degree, antioxidant enzyme activities and color parameters were good.
