    不同产区雪茄茄芯烟叶关键挥发性香气成分分析

    Study on Key Volatile Aroma Components of Cigar Filler from Different Producing Areas

    • 摘要: 为了解不同产区雪茄茄芯烟叶关键挥发性香气成分,采用HS-SPME Arrow-GC-MS法测定了印尼、巴西、多米尼加、墨西哥、海南和四川等产区雪茄茄芯烟叶中挥发性香气成分,采用OPLS-DA方法筛选出不同产区间主要差异成分,并分析了它们与感官品质的相关关系。结果表明,所测样品中挥发性香气成分共124种,除新植二烯外,杂环类、酸类、酮类和酯类占总量的84%以上;含量较高的是新植二烯、2,3’-联吡啶、3-甲基戊酸、乙酸、3-乙酰基吡啶、二烯烟碱、二氢猕猴桃内酯等。不同产区中挥发性香气成分总量由高到低依次为印尼、海南、墨西哥、巴西、多米尼加和四川,印尼的芳香族、酮类和酯类含量最高,墨西哥的醛类和酸类含量最高,海南的醛类、醇类和杂环类含量最高。共筛选出不同产区差异性物质52种,主要为醇类和杂环类。相关分析结果表明,9种挥发性香气成分与香味指标显著正相关,其中7种与果香、花香和坚果香风味密切相关。研究结果为雪茄茄芯烟叶风格特色定位提供了参考。

       

      Abstract: In order to understand the key volatile aroma components in cigar core tobacco leaves from different producing areas, the volatile aroma components in cigar core tobacco leaves from Indonesia, Brazil, Dominica, Mexico, Hainan and Sichuan were determined by HS-SPME Arrow-GC-MS method, and the main different components were screened by OPLS-DA method. The correlation between them and sensory quality is analyzed. The results showed that there were 124 volatile aroma components in the samples, among which heterocyclic, acid, ketone and ester accounted for more than 84%. The high content compouns included neophydiene, 2,3' -bipyridine, 3-methylvaleric acid, acetic acid, 3-acetylpyridine, dienicotinine, and dihydrokiwi lactone, etc. The total amount of volatile aroma components in different producing areas from high to low was in the order of Indonesia, Hainan, Mexico, Brazil, Dominica and Sichuan. Indonesia had the highest content of aromatic, ketones and esters, Mexico had the highest content of aldehydes and acids, and Hainan had the highest content of aldehydes, alcohols and heterocyclic compounds. A total of 52 different substances were screened from different producing areas, mainly alcohols and heterocyclic compounds. Correlation analysis showed that 9 volatile aroma components were positively correlated with aroma indexes, and 7 of them were closely related to fruit, floral and nut aroma. The results provided a reference for the positioning of tobacco leaf style characteristics.
